Definition- Blueberry anthocyanins are a group of natural pigments found in blueberries. Anthocyanins belong to the flavonoid family of compounds. They are responsible for the blue, purple, and red colors of many fruits, vegetables, and flowers. In blueberries, they are concentrated in the skin, giving the berries their characteristic deep – blue to purple hue.
